INGREDIENTS
1 lt Red Grape Juice
1 lt White Grape Juice
2 lt Cranberry & Raspberry Juice (Ocean Spray)
12 oz sugar
Nutrient
1 tsp. Pectic Enzyme
˝tsp tartaric acid
Good wine yeast
METHOD
Put all the ingredients, except for 1 litre of the cranberry juice, into a
demi-john. When the SG reaches 1005, add the remaining cranberry juice. Ferment
to dryness.Return to top of page
Cranberry & Blueberry Rose (Cranberry/Blueberry/Elderberry)

INGREDIENTS
1 ltr cranberry & blueberry juice
1 ltr white grape juice
1/2 ltr apple juice
10 oz elderberries (boiled 5 mins and use liquid)
nutrient, pectic enzyme, yeast
1lb 12 oz sugar
METHOD
Mix ingredients, with only 1lb sugar initially. Add further 8 oz sugar when initial
fermentation has died down. Ferment to dryness, add Campden tablet and leave for a
few days before racking. Add a further Campden tablet, some wine stabiliser and the
last 4 oz sugar to sweeten to medium dry.
