Grapefruit Aperitif

INGREDIENTS
6 Grapefruit
1 lb. Sugar
1 lb. Raisins
1 ltr white grape juice
1 tsp. Pectic Enzyme
⅛tsp tannin
Campden Tablets
No 3 Yeast and nutrient
METHOD
Peel the grapefruit, chopping the peel of 2 grapefruit for the wine. Squeeze the
juice from the grapefruit into a fermentation bucket and add the raisins, white grape
juice, pectic enzyme and a Campden tablet. Leave for 24 hours, stir and add yeast
and nutrient. After 5 days, add 8oz of sugar. Strain the pulp 2 days
later into a demi-john. Continue adding the sugar at intervals. Final OG should be
around 991. Further sugar could be added, after stabilising, to make a sweeter
aperitif.
